Coconut Bread


Preparation Time: 30 minutes
Cooking Time: 45 minutes
Serves: 8
Country: Jamaica


INGREDIENTS:


2 cups all purpose flour
1 Tbsp. baking powder
1/8 tsp. salt
1/2 cup sugar
1 large egg, slightly beaten
1/4 cup coconut milk
6 Tbsps. soft margarine, melted
1/2 tsp. vanilla
6 Tbsps. raisins, floured
1/2 small coconut, peeled and grated
METHOD / DIRECTIONS:


Preheat oven at 350°F/180°C
Sift dry ingredients in a bowl.
Combine sugar, beaten egg, coconut milk, melted margarine, vanilla, raisins and grated coconut.
Scrape mixture on a floured board and knead lightly to form a dough.
Shape dough and place into a greased loaf pan and bake for 45 minutes or until done.
SERVING SUGGESTIONS:

Coconut bread can be served with your favourite cheese, jelly or jam.

Jamaican Festival Recipe


Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves: 10 people
Country: Jamaica


INGREDIENTS:


1/2 cup flour
1 tsp. baking powder
1 Tbsp. GRACE HELLO SOFT MARGARINE
1 cup GRACE CORNMEAL
1/4 cup sugar
1 tsp. nutmeg
1/2 tsp. salt
1 tsp. lime juice
1/2 cup water
1/2 cup GRACE FRYING OIL
METHOD / DIRECTIONS:


In one large bowl, sift flour and baking powder. Add cornmeal, sugar, nutmeg, salt, margarine, lime juice and enough water to bind mixture to a manageable dough.
Leave to stand for two minutes.
Heat Grace Frying Oil in a pan, shape festival into fingers and fry.
Drain on absorbent paper.

Jamaican Jerk Chicken Recipe


INGREDIENTS:


1 tbs. Ground allspice
1 tbs. Dried thyme
1 1/2 tsp. Cayenne pepper
1 1/2 tsp. Freshly ground black pepper
1 1/2 tsp. Ground sage
3/4 tsp. Ground nutmeg
3/4 tsp. Ground cinnamon
2 tbs. Salt
2 tbs. Garlic powder
1 tbs. Sugar
1/4 cup Olive oil
1/4 cup Soy sauce
3/4 cup White vinegar
1/2 cup Orange juice
Juice of 1 lime
1 Scotch bonnet pepper, seeded and finely chopped
1 cup Chopped white onion
3 Green onions, finely chopped
4 Chicken breasts (6 to 8 oz)trimmed of fat
METHOD / DIRECTIONS:

In a large bowl, combine the allspice, thyme, cayenne pepper, black pepper, sage, nutmeg, cinnamon, salt, garlic powder and sugar. With a wire whisk, slowly add the olive oil, soy sauce, vinegar, orange juice, and lime juice. Add the Scotch bonnet pepper, onion, and green onions and mix well. Add the chicken breasts, cover and marinate for at least 1 hour, longer if possible. Preheat an outdoor grill. Remove the breasts from the marinade and grill for 6 minutes on each side or until fully cooked. While grilling, baste with the marinade.
