2 tbsp. vegetable oil
1 med. yellow onion, chopped
1 clove garlic, crushed
1 lb. ground beef
1/2 tsp. ground coriander
1/4 tsp. ground ginger
1/2 c. tomato sauce
1 tsp. light brown sugar
2 tbsp. minced parsley
1/3 c. chopped pimento stuffed olives
1/2 tsp. salt
1/8 tsp. black pepper
Preheat the oven to 375 degrees. Heat the oil in a 12 inch skillet. Add the onion and garlic, and cook uncovered for 5 minutes or until onion is soft. Add the beef and cook, uncovered until browned. Add the coriander, ginger, tomatoes, brown sugar, parsley, olives, salt and pepper and mix well. Transfer to an ungreased 1 quart casserole and bake uncovered for 20 minutes. Serve with rice.
